Cooking with K: Vegetable Noodle Stir Fry Recipe

Today Kalyra shows us how to make a simple yet delicious stir fry vegetable noodle dish. Asian is my favourite food to eat: light, simple, easy, nutritious and delicious.

NB. I always change recipes to suit the ingredients I have on hand. This recipe originally called for beef, but we are vegetarians so we substituted it for tofu

Vegetable Noodle Stir Fry Recipe

Tofu, Oyster, Mushroom and Broccolini Stir-fry

450g pkt noodles
1tbs fresh ginger
2 garlic cloves
Tofu, beef or other meat
1 bunch of broccolini, cut into 3 lengths
1 red capsicum sliced
150g oyster mushrooms, halved
1/4 cup oyster sauce
1tbs soy sauce
1tbs kecap manis

In bowl combine ginger, garlic, tofu and 1 1/2 tbs of olive oil. Heat a wok over medium high heat, cook tofu in batches. Put on plate.

Add remaining oil. Add broccolini and capsicum. Cook for 2 minutes. Add mushrooms for 1 minute.

Add noodles, tofu, oyster sauce, soy sauce and kecap manis.

Cook for 3 mins.

Serves 4
