Kalyra has always enjoyed cooking from an early age. Now that she has a couple of her own aprons, we are visiting the kitchen together a whole lot more. I love Cooking with K.
Blueberry Pancakes
2 eggs
2 tsps margarine, melted
2and 1/2 cups self-raising flour
2Tbls sugar
blueberries- as desired
In a large bowl beat eggs, margarine and milk. In a separate bowl mix flour and sugar and gradually stir into wet mixture until smooth. Fold in blueberries.
Heat oil in non-stick pan over medium heat. Add 2-3 tbls of the mixture. Flip when bubbles appear in the centre of the pancake adn cook until golden brown. Serve with banana and drizzled honey. Makes 10
Variation: Out the bananas in with the mixture first and cook them. You can substitute the berries for apples, sultanas or other fruit that suits your fancy.

What a cutie. She reminds me of my girls when they were small. My oldest, Laura especially loved to help in the kitchen. She’s now almost 20 and a wonderful cook in her own right. The pancakes look yummy.
Thanks Brenda. She’s forcing me to get back into the kitchen now. She has been watching My Kitchen Rules with me of an evening, and now wants to throw that apron on. It is really good mummy daughter time actually.
